The ingredients you'll need:
3 x Free range eggs
1 x fillet smoked mackerel (flame and check for bones)
Pinch of salt
Pinch of pepper
Avocado
Lime juice
Parsley
Carry out the following steps:
Method
In a frying pan, heat oil for 2 minutes
Flake your fish and discard any bones
Grab a bowl and beat the 3 eggs
Cut an avocado into mini squares
Pour the eggs and avocado into the frying pan
Season with salt, pepper and lime juice
Garnish with parsley
