#ChefShack - How to make leek and potato soup

Is there anything more comforting than a good ol’ soup? Cleanse your soul with homemade leek and potato soup! Not only is your bowl of goodness incredibly filling, it’s also high in fibre and carbohydrates. At #ChefShack we’re sharing our top-secret recipe for a leek and potato soup, simply follow the steps below…

Ingredients

For the soup:

  • 1 x large leek - washed and sliced thinly

  • 1 x large potato - peeled and sliced super thin

  • 2 x springs of thyme

  • 1 x clove of garlic - sliced

  • 50g butter

  • 1 x vegetable stock cub

  • 600-700 ml water

  • Salt

  • Pepper

For the garnish:

  • Sliced leeks

  • Chives

Method

For the soup:

  • Melt 50g of butter into a saucepan

  • Add sliced potato, leek and garlic

  • Sprinkle a pinch of salt and pepper

  • Pour in 600-700ml of water

  • Cook over a gentle heat for 10 minutes

  • Add vegetable stock cub

  • Add springs of thyme

For the garnish:

  • Add sliced leeks

  • Slice and sprinkle chives
