#ChefShack Lamb Skewer Recipe

This light and refreshing lamb skewer recipe is a favourite of our Executive Chef Richard Edney and is packed full of the flavours of summer. The lamb skewers use fragrant herbs and spices and the cooling yoghurt and tahini dressing is both healthy and delicious! INGREDIENTS – SERVES 4

Lamb Skewers

  • 400g lamb mince

  • Handful of chopped coriander

  • 1/2 Red onion

  • 1tsp Garlic powder

  • 1tsp Onion powder

  • 1tsp Smoked paprika

  • 1tsp Cumin powder

  • Pinch of cinnamon

  • Salt and pepper to taste

  • Skewers

Tahini & Yoghurt Dressing

  • 4 tbsp Yoghurt

  • 1 tsp tahini

  • Good squeeze and of Lemon

  • Salt and pepper to taste

To Serve

  • Flatbreads or fluffy basmati rice

  • Salad of your choice

Method

  1. Mix all the lamb skewer ingredients together in a bowl – using your hands is best here so make sure you wash them and then it’s time to get messy.

  2. Portion and shape the mixture into 4 long kebabs around your skewers. If your skewers are wooden make sure you soak them in water before so they do not burn when cooked.

  3. You can then either BBQ or grill your skewers until they are slightly charred on the outside.

  4. For your yoghurt and tahini dressing simply mix all the ingredients together in a separate bowl.

  5. Serve the skewers with a salad of your choice, flatbreads and a generous drizzle of the yoghurt and tahini dressing on top. Enjoy.
